Chocolate Covered Peanut Butter Balls
2 cups peanut butter
1 cup (2 sticks) butter, softened
4 to 5 cups confectioners' sugar
1 large bag (12 ounces) chocolate chip morsels
2 tablespoons vegetable shortening
Line a baking sheet with parchment or waxed paper.
In a bowl, mix well the first three ingredients. Roll into equal-sized balls. Place on the
prepared baking sheet and refrigerate for 30 minutes. In a medium saucepan melt morsels
with shortening. Stir until smooth and glossy. Dip balls into the chocolate mixture to
coat and place back on the baking sheet. Put in the refrigerator again for another 30 minutes.
